Tonight's dinner was Beef Stir-Fry! I still hadn't gone to the grocery store since the beach so I had to get creative again. I had a package of stir-fry veggies in the freezer and some leftover frozen sirloin steak that Sam had used for Shish-Kabobs for his brother's bachelor party. I had a little GF teriyaki sauce leftover from the first stir-fry meal we made so I threw it all in a pan and it was delish! Not much effort, but simple and good. If I end up on this diet longer than this month, you can bet that we will be having stir fry at least twice a month.
The other thing I whipped up today was GF-CF chocolate peanut butter rice krispie treats!! I wanted to make these without marshmallows so I looked up a recipe on allrecipes.com to copy. It was pretty simple, really. Just sugar and corn syrup and peanut butter. Then I added a few tablespoons of cocoa powder.
Once that was all combined, I added the new GF Rice Krispies that I bought a few weeks ago.
