Day 23: Eggs

Finally back home and ready to start cooking again! I stole a recipe from my cousin's blog. Her blog also inspired me to start taking pictures of the food I cook. Let's see if I will actually have time to post them. So anyway, she made mini egg quiches in a muffin tin without a crust and I thought "Hey! Theses are GF without trying and maybe my kid will eat them since they look like a muffin." Well, that didn't exactly happen. I scrambled 10 eggs and added salt and pepper and about 3 tbs of milk.

I made 5 for me with broccoli and ham and 5 for my hubby with jalapenos and ham. I also made 2 plain ones for Daniel with the hope that he would eat them.
Well, he took one look at them and whimpered a little and said "Blueberry?" He wouldn't even allow the plate to be near him. We did make him try a bite and he didn't spit it out. Then I defrosted him a GF blueberry muffin from the freezer which he enjoyed greatly : ) As you can see in the picture, I also added cheese to two of the muffins. I wanted to try that Daiya cheese again. It actually tasted really good in this dish: creamy and cheesey. But the smell still bothered me.






For lunch today I decided to try hot dogs. I haven't bought hot dogs in almost a year because I don't care for them much, my husband won't touch them, and Daniel decided he wouldn't eat them anymore. At the last birthday party we went to though, Simon LOVED them! So I thought I would try again and, what-do-you-know, he ate a whole hot dog and then some! I made sure they were "premium" with no nitrates, fillers, etc.
