Day 9: Food for thought

Today was a tough day as far as food cravings went. I wanted to cheat on this diet so badly. It took all my willpower to not eat a big hunk of cheese out of the refrigerator! So I ate some Tater Tots instead! That helped. And tonight, I ate a cupcake (GF of course!).

Tonight for dinner I made Caramelized Pork Chops! Here is the recipe:
*Saute pork chops in pan with minced garlic, salt, and pepper
*Mix together: 2 tbs brown sugar
1 tbs orange juice
1 tbs (blackstrap) molasses
* Pour over cooked pork chops and cook 2-5 more minutes until pork is caramelized and sauce is thick.

Now, not related to GF-CF. I was reading this blog today. The author did an amazing job helping young children understand what autism really is. It really touched me to read the way she describes her son and his differences. If you read it, be sure you read the next few blog posts where she goes into more details about his sensory issues, echolalic speech, and other issues.

What we ate today:
Breakfast
Waffle with PB; Blueberries (both of us)

Lunch
Watermelon; one of 3 chicken nuggets (I guess he didn't really like them as much as I thought) (daniel)
Egg and Ham omelet in a tortilla; watermelon (me)

Dinner
Grapes; Bell Pepper; Rice Cake with PB (daniel)
Caramelized Pork Chop; Sweet Potatoes; Salad (me)

Snacks
Tater Tots; Snack Mix
